TX Biltong and Feta Muffins
These tasty biltong muffins are the ultimate protein-packed snack to fuel your day – morning, noon or night.

Makes 9 muffins

Ingredients:

120 g (215 ml) self-raising flour
15 ml baking powder
3 ml salt
120 g (215 ml) wholewheat flour
200 g TX Biltong (finely chopped)
200 g Feta cheese (crumbled)
1 egg
350 ml milk
50 ml melted butter

How to:
  • Preheat your oven to 180°C.
  • Line 9 standard muffin-tin hollows with baking paper.
  • In a mixing bowl, sift together the self-raising flour, baking powder and salt.
  • Toss in the wholewheat flour, TX Biltong and crumbled Feta. Mix it up real good.
  • In another bowl, whisk together the egg, milk and melted butter.
  • Pour the wet mixture into the dry ingredients, stirring until everything’s well combined.
  • Evenly scoop the batter into the muffin hollows.
  • Bake for 25-30 minutes or until a thin skewer comes out clean.
